Choco Chirp Chickpea Cookies

  • Non-stick cooking spray or your choice of alternative 
  • 1 cup firmly packed brown sugar
  • 3/4 cup of butter or trans-fat free margarine
  • 2 large egg whites
  • 2 teaspoons vanilla extract
  • 1 (15oz) can chickpeas, drained and rinsed
  • 1 scoop of EarthProof Chocolate & Sea Salt Protein Powder
  • 2 cups (12oz) semi sweet chocolate chips
  • 2 cups all-purpose flour
  • 1/2 cup oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  1. Preheat your oven to 350°F.
  2. Take a baking sheet and generously coat it with cooking spray to prevent sticking.
  3. In a large mixing bowl, use a wooden spoon or a mixer on medium speed to beat together the sugar and butter/margarine until the mixture becomes smooth.
  4. Next, add the egg whites and vanilla to the mixture and continue beating until well combined.
  5. Now, introduce the chickpeas, protein powder, and chocolate chips into the bowl.
  6. Add the flour, oats, baking soda, and salt to the mixture.
  7. Mix the contents of the bowl on low speed until a thick dough forms.
  8. Using a spoon, drop the dough onto the prepared baking sheet, making sure to space the cookies about 2 inches apart.
  9. To shape the cookies, gently press them down using a fork to flatten them slightly.
  10. Bake the cookies in the preheated oven until they turn a golden brown color, which should take approximately 11-13 minutes.
  11. After baking, allow the cookies to cool on a rack before enjoying your delicious creation!
