Ingredients
- Non-stick cooking spray or your choice of alternative
- 1 cup firmly packed brown sugar
- 3/4 cup of butter or trans-fat free margarine
- 2 large egg whites
- 2 teaspoons vanilla extract
- 1 (15oz) can chickpeas, drained and rinsed
- 1 scoop of EarthProof Chocolate & Sea Salt Protein Powder
- 2 cups (12oz) semi sweet chocolate chips
- 2 cups all-purpose flour
- 1/2 cup oats
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Preparation
- Preheat your oven to 350°F.
- Take a baking sheet and generously coat it with cooking spray to prevent sticking.
- In a large mixing bowl, use a wooden spoon or a mixer on medium speed to beat together the sugar and butter/margarine until the mixture becomes smooth.
- Next, add the egg whites and vanilla to the mixture and continue beating until well combined.
- Now, introduce the chickpeas, protein powder, and chocolate chips into the bowl.
- Add the flour, oats, baking soda, and salt to the mixture.
- Mix the contents of the bowl on low speed until a thick dough forms.
- Using a spoon, drop the dough onto the prepared baking sheet, making sure to space the cookies about 2 inches apart.
- To shape the cookies, gently press them down using a fork to flatten them slightly.
- Bake the cookies in the preheated oven until they turn a golden brown color, which should take approximately 11-13 minutes.
- After baking, allow the cookies to cool on a rack before enjoying your delicious creation!
